We just got Windows Server 2008 R2 out the door -- so right now no plans.  It's highly possible that you can use the SP1, we just don't know if there might be any issues.  I'll add this to our roadmap - we are looking at ways to let customers go to patch versions without doing major certification work - at least with those platform components that we are fairly confident will not affect our application ....
