Our printer uses the paper tray 3 for making copies. But we'd like to change this so the printer uses the paper tray 2 instead. I didn't find any option for this in the printer settings or in the "HP LaserJet M4345MFP User Guide".
Is there actually a way to choose anothter paper source tray for making copies?

Generally, the choice of tray is based on paper size. If Tray 2 has Legal and Tray 3 has Letter and you try to make a letter copy it should try to print from tray 3.
Also, in most cases it tries to print to "Plain" paper. If tray 2 is set to "preprinted" the unit will pick another tray.
You might print a "Menu Map" and verify the tray settings.

If I got you right, there's no setting for configuring a specific source paper tray for it right?
That has helped me already.
Cause it means that I'm not just inaptly to find it and I can stop looking for a setting. ;)
The paper tray settings are set as followed.
Default Paper Size: A4
Tray 1 Size: Any Size
Tray 1 Type: Any Type
Tray 2 Size: A4
Tray 2 Type: Plain
Tray 3 Size: A4
Tray 3 Type: Plain
Tray 2 and 3 are set to plain.
But nevertheless the printer takes always the paper from tray 3 for making copies.
Is there really no way to change the source paper tray for copies if both are set to plain???

In paper tray 2 there's plain white paper.
In paper tray 3 there's white paper with a small logotype on the right top corner.
But I don't think the logotype has here a special influence, hasn't it?
Cause both trays are set to plain paper and the printer takes it from the tray where the logotype paper is.
